Understanding Pour-Over Coffee — Methods, Equipment, and What to Expect
Pour-over is a manual coffee brewing method in which hot water is poured over grounds held in a filter, with gravity drawing the brew through into a carafe or cup below. The defining characteristics of a well-made pour-over are clarity and brightness: because water passes through the grounds once rather than sitting with them (as in a French press), and because a paper filter removes the fine particles and oils, the resulting cup is clean and well-defined, with the individual characteristics of the coffee — origin, roast level, processing method — more distinctly present than in most other brewing methods. Pour-over is particularly well-suited to single-origin and lighter-roasted coffees.
The most widely used pour-over drippers carried by ECS Coffee include the Hario V60, a cone-shaped dripper with helical ribs and a single large opening at the base that allows the brewer to control flow rate through pour technique — it is the benchmark pour-over dripper for specialty coffee worldwide. The Chemex functions as both a dripper and a serving carafe in a single borosilicate glass vessel; its thicker bonded paper filter produces one of the cleanest cups possible and is especially effective with lighter roasts and delicate single origins. Both methods require a gooseneck kettle for controlled pouring — a standard kettle spout pours too fast and unevenly to produce a consistent result. Pour-over coffee requires a bit more attention than pressing a button on an automatic machine, but the technique is straightforward once learned. The key variables are water temperature (90–96°C is the general target range), grind size (medium to medium-fine for most V60 and Chemex applications), coffee-to-water ratio (typically 1:15 to 1:17 by weight), and pour timing.
