Why Use a Sparkling Water or Soda Maker?

A sparkling water maker uses a standard COâ‚‚ cylinder to carbonate liquid in seconds, press a lever or turn a knob to release COâ‚‚ into a sealed bottle, and you have fresh sparkling water instantly. No electricity required. No carrying cases of cans from the store. The ongoing cost of a 60L cylinder exchange is roughly $20-$25 at most Canadian retailers, but at ECS we carry Indigo cannisters so your exchange costs $14. (in store only)

Most sparkling water makers carbonate water only. You add flavour afterward, a splash of syrup, or a squeeze of citrus. This works perfectly for everyday sparkling water drinkers. But one machine in our lineup goes further: the Breville InFizz Fusion can carbonate any liquid directly using its FusionCapâ„¢ technology. Juice, wine, flat soda, cocktails, you load the flavoured liquid into the bottle, attach the FusionCap, and carbonate it in place. The result is a fully carbonated, pre-flavoured drink with no dilution and no separate mixing step.

ECS carries two brands in this category: SMEG and Breville. SMEG’s Soda Maker is a water-only machine built around Italian design, slim, matte-finished, and available in four colours that complement SMEG’s broader kitchen aesthetic. Breville offers two models: the InFizz Aqua (water only) and the InFizz Fusion (any liquid). We also carry Canada’s largest in-store syrup selection! A note on COâ‚‚ Cylinders:

Our machines use a standard 60L screw-in COâ‚‚ cylinder. Here are the key facts:

  • A full 60L cylinder produces approximately 60 litres of sparkling water at around $0.35 per litre.
  • Cylinder exchange (empty for full) costs roughly $20–$25 and is available at most major Canadian grocery stores, home improvement retailers, and through mail-in programs.
  • SMEG, Breville InFizz Aqua, and InFizz Fusion are all compatible with standard 60L / 425g screw-in cylinders, including SodaStream screw-in cylinders (not the Quick Connect snap-fit cylinders).
  • COâ‚‚ cylinders are not available for home delivery, because they are considered hazardous for shipments.

A 60L CO₂ cylinder exchange costs anywhere from $13+ and produces about 60 litres of sparkling water at approximately $0.35 per litre. Bottled sparkling water runs $1.50 to $3.00 per litre. A household drinking two litres per day pays back a $200 machine in under three months on savings alone, and eliminates dozens of single-use cans and bottles per week. If you only drink sparkling water occasionally, the payback period is longer — but the convenience of fresh sparkling water in 10 seconds is significant for most people who try it. The short answer: if you buy sparkling water more than twice a week, it’s almost certainly worth it.

What makes the Breville InFizz Fusion different from the other machines?

The InFizz Fusion is the only machine we carry that can carbonate any liquid — not just water. Using its FusionCap™ system, you pour flavoured beverages directly into the bottle, attach the cap, and carbonate in place. Juice, wine, cocktails, re-fizz flat soda, sparkling lemonade — all of it works without diluting the drink with plain water first. The FusionCap gives you control over CO₂ release speed, which matters for carbonating delicate liquids like wine (slow release) versus water (fast). The bottle also stores in the fridge, so you can carbonate a batch and keep it cold. If your main use case is plain sparkling water, the Fusion’s extra capability may not justify the price premium. But if you entertain, make cocktails, or want to carbonate juice for kids, the Fusion is the machine to get.

What is the difference between the SMEG and the Breville InFizz machines?

The SMEG Soda Maker and Breville InFizz Aqua both carbonate water only — you add flavour after. The key difference between those two is design: SMEG has a retro Italian aesthetic with a slim profile and matte colour finishes (Jade Green, Fog Blue, White, Matte Black) that coordinate with its other kitchen appliances. The SMEG uses a carbonation knob with three preset levels, while the Breville uses a lever you press manually to control fizz intensity. The Breville InFizz Fusion is a different category entirely — it carbonates any liquid directly and is meaningfully more capable. If you’re choosing between the SMEG and InFizz Aqua, it comes down to whether SMEG’s design premium matters to you. If you’re comparing either water-only machine to the InFizz Fusion, the question is whether you want to carbonate beyond water.

What syrups work best for making homemade Italian sodas and flavoured sparkling water?

At ECS we carry over 600 syrups available in-store and online. We carry 4 different syrup brands - Torani, Matteo's Made in Canada, 1883 and Monin. For Italian sodas — the classic recipe is 2–3 tablespoons of syrup poured over ice in a tall glass, topped with sparkling water and stirred — fruit flavours work best: raspberry, passion fruit, peach, blood orange, and lime are the most popular. For lighter flavoured sparkling water, use half the syrup. For cocktail mixers, both Torani and Matteo’s carry flavours designed specifically for bar use.
