The Emotional Stages of Dialling In Espresso

Dialling in espresso is a journey. It’s a delicate dance of grind size, dose, tamping, and timing, and if you’ve ever tried it, you know it’s just as much an emotional rollercoaster as it is a technical process. Here’s a look at the stages every espresso enthusiast experiences when dialling in that perfect shot.

Stage 1: Optimistic Excitement

You’ve just got a new bag of beans, your grinder is freshly cleaned, and your espresso machine is gleaming. “This is it,” you tell yourself. “This shot is going to be perfect.” Your excitement is almost tangible, and you might even do a little happy dance before the first grind.

Stage 2: Confused Curiosity

You pull your first shot and… it tastes wrong. Too sour? Too bitter? Too watery? Suddenly, the language of espresso, extraction, bloom, yield, ratio, feels like a foreign code you have to decipher. You adjust the grind and dose and try again, wondering why this feels more like chemistry than coffee.

Stage 3: Mild Frustration

After a few attempts, the shots still aren’t right. Maybe it’s under-extracted, or maybe you went too far the other way. Your friends or family ask if you’re okay, and you mutter something about “dialling in” while trying to ignore the tiny panic creeping in.

Stage 4: Determined Experimentation

Now it’s serious. You’re measuring doses, weighing yield, timing shots down to the second. You tweak the grind, adjust the tamp, maybe even check the roasted date again. This is your lab. Precision is your goal, and failure is just another step toward learning.

Stage 5: Glimmers of Hope

Finally, a shot comes out that’s close. The flavour is balanced, the crema looks good, and your excitement bubbles up again. You pull another, hoping it wasn’t just a fluke, and for the first time in a while, your taste buds are smiling.

Stage 6: Obsessive Refinement

One perfect shot is never enough. You tweak slightly here, a fraction finer there. You experiment with temperature, pre-infusion, and extraction time. Each shot teaches you something new, and every small improvement feels like a victory.

Stage 7: Blissful Satisfaction

At last, the perfect shot. Balanced, rich, flavourful, and just the right texture. You savour it slowly, maybe even close your eyes for a moment. Hours of trial, error, and tiny adjustments have led to this one cup. And while you know tomorrow you’ll probably start dialling in again with a new bag, this moment is pure espresso bliss.
