Hatch Specialty Coffee — also known as Hatch Crafted — is a specialty coffee roastery based in Markham, Ontario. The brand's story began long before its official launch, when its founder first started roasting coffee by hand while living in West Africa. In 2015, Hatch established its roastery and brewery in the Greater Toronto Area, and has since become one of Canada's most progressive and quality-focused coffee companies.
Hatch took an unconventional path, becoming one of the first specialty operations in Canada to build out cold brew production early on. From there, the team committed to roasting coffee its own way, combining technical precision with a flavour-first philosophy. Hatch continually refines its roast profiles and explores new processing methods, sourcing high-quality coffees that showcase clarity, sweetness and complexity in the cup.
What sets Hatch apart is its experimental, detail-driven mindset.
