Water temperature is the most overlooked variable in making great tea or coffee. Every category of tea and every brewing method for coffee has an optimal water temperature range, and brewing outside that range changes the flavour significantly. Green tea brewed at a full boil turns bitter and grassy because high heat extracts harsh compounds that lower temperatures leave behind. Pour-over coffee needs 91-96°C to hit the SCA Gold Cup extraction range.
