Kettles

Water temperature is the most overlooked variable in making great tea or coffee. Every category of tea and every brewing method for coffee has an optimal water temperature range, and brewing outside that range changes the flavour significantly. Green tea brewed at a full boil turns bitter and grassy because high heat extracts harsh compounds that lower temperatures leave behind. Pour-over coffee needs 91-96°C to hit the SCA Gold Cup extraction range. Standard kettles that boil to 100°C with no other option make it impossible to brew green tea, white tea, or oolong at the correct temperatures without waiting, guessing, and checking.

A variable temperature kettle solves this by heating precisely to a target and holding it there... no guessing, no waiting for water to cool. For pour-over coffee, spout shape matters as much as temperature. A gooseneck spout gives you precise flow rate control that directly affects how evenly grounds are saturated and how consistently the coffee extracts.
