The journey of Balzac's Coffee Roasters began in 1993 when founder Diana Olsen returned to Canada after studying the traditional art of coffee roasting and café culture in Paris, France. Inspired by the grand European cafés and French author Honoré de Balzac's famous quote, "The café is the people's parliament," she opened her first artisanal café in Stratford, Ontario. Olsen's vision was to establish a sophisticated, welcoming space where communities could gather over exceptional, locally roasted coffee, a concept that quickly resonated across the province.

Balzac's stands out in the Canadian coffee industry for its dedication to sustainable, high-quality sourcing and small-batch production. The company was an early adopter of ethical trade practices, ensuring that a significant portion of their beans are certified organic and Fairtrade. They utilize an innovative, eco-friendly Loring smart roaster at their production facility, which significantly reduces greenhouse gas emissions and energy consumption compared to conventional roasters, while maintaining precise control over the heat profile to lock in nuanced flavours.
