This unique coffee lot of highly sought after coffee variety, Gesha, comes from a multiple Cup of Excellence winning coffee farm, La Divina.
This lot of coffee has been anaerobically fermented for 100 hours in closed fermenting tanks, and later sun-dried on raised beds to achieve a unique symphony of flavours. A banana cake profile with low acidity, juicy maple syrup like sweetness and nice overall jammy notes.
Roasted for any brew method.

The Bean. Anaerobic fermentation is a process that enriches coffee bean’s original qualities. Fermentations have been used for centuries and in coffee it means that the glucose molecules are transformed in the absence of oxygen.
Although all coffees undergo some sort of fermentation, starting at the time harvesting the cherries. This lot of coffee was processed by immersing the intact cherries in special bags with a syphon valve prevent oxygen from entering and allowed to ferment for 100 hours. After the fermentation period, the cherries were sun-dried on raised beds undergoing natural processing.
The Roast.
This Gesha anaerobic is packed with mellow notes of banana cake with toffee, with raw sugar (panela) undertones. Due to its extremely low acidity we recommend this coffee for both filter and espresso, try 15:1 water to coffee ratio to start. Enjoy slowly to discover how the flavor layers change as the coffee temperature cools down. Great option for cold brew coffee as well.

If you are purchasing a bag of whole bean coffee on our website, you can select your grind method of choice (at no extra charge!) from the dropdown and we will grind and ship it to you. We grind the beans freshly for you at our warehouse in ECS Coffee Burlington right before your order is shipped, and reseal the package to maintain optimal freshness in transit.
If you are visiting us in store, you can also request for your beans to be ground in store before you take them home.
We use a commercial BUNN Burr Grinder to grind the beans.
Please note: Freshly ground coffee is non-refundable and not returnable. To ensure that you receive a ground coffee that is consistent with your brew method of choice, refer to our Grind Chart below!

Choose a medium fine grind if you are brewing with a Moka Pot, stovetop espresso brewers or an Aeropress. |

Cone Filter - We use two medium settings depending on your brewer. The Cone Filter medium setting is a bit finer, and is suitable for pour-over drip brewers (cone style) such as Hario, Melitta, Clever. It is also used for cone style automatic brewers. Flat Bottom Filter - This setting is suitable for coffee machines with a flat bottom basket filter, such as commercial automatic drip machines. It is also an appropriate setting for if you have a refillable coffee capsule for use in Keurig® machines. Medium coffee grinds will be around the same size as sea salt. |
PERCOLATOR |
If you are brewing with a percolator, the grind setting is a bit coarser than your standard medium grind, to minimize grinds making it through the filter. We use a percolator-specific setting on our grinder. |

For french press, cold brew coffee. A coarse grind is very chunky in look, like crushed peppercorns. |
