We have spent years searching for a decaf that doesn't taste like... decaf. Most decaf coffees have a flat, starchy aftertaste, but this one is processed in a unique way that retains the delicious richness and vibrance of the natural terroir.

The process is called sugarcane ethyl acetate decaffeination (also known as natural decaf), and it begins with the fermentation of molasses from sugarcane, which grows abundantly in Colombia. The result is ethanol, and it's mixed with acetic acid to create ethyl acetate. Wine, beer, and certain fruits contain ethyl acetate too, and elsewhere in the world, companies use a synthetic ethyl acetate to decaffeinate their coffee — but with sugarcane so readily available in Colombia, it makes economic sense to use it for a more natural process.

Next, the green coffee is conditioned with water and steam, softening the beans and opening the pores to facilitate caffeine extraction. The coffee is then washed with the ethyl acetate, which binds to the chlorogenic acid and draws out the caffeine. This stage takes about eight hours, after which the ethyl acetate mixture (containing the caffeine) is drained from the beans and distilled, leaving behind pure caffeine that can be used to make pharmaceuticals, cosmetics, and other products instead of being wasted.

The coffee, meanwhile, undergoes another steam bath to evaporate any remaining ethyl acetate. The other wonderful flavour compounds of the coffee are left relatively intact, which is why it's a popular decaf method (and certainly our favourite). Once the beans are dried, they're prepared for export to roasters like us!

Whole Bean Grind Chart

If you are purchasing a bag of whole bean coffee on our website, you can select your grind method of choice (at no extra charge!) from the dropdown and we will grind and ship it to you. We grind the beans freshly for you at our warehouse in ECS Coffee Burlington right before your order is shipped, and reseal the package to maintain optimal freshness in transit.

If you are visiting us in store, you can also request for your beans to be ground in store before you take them home.

We use a commercial BUNN Burr Grinder to grind the beans.

Please note: Freshly ground coffee is non-refundable and not returnable. To ensure that you receive a ground coffee that is consistent with your brew method of choice, refer to our Grind Chart below! 

FINE

For use with espresso machines. Fine coffee grinds will have the size and feel of sand.

MEDIUM FINE

Choose a medium fine grind if you are brewing with a Moka Pot, stovetop espresso brewers or an Aeropress.

MEDIUM

Cone Filter - We use two medium settings depending on your brewer. The Cone Filter medium setting is a bit finer, and is suitable for pour-over drip brewers (cone style) such as Hario, Melitta, Clever. It is also used for cone style automatic brewers.

Flat Bottom Filter - This setting is suitable for coffee machines with a flat bottom basket filter, such as commercial automatic drip machines. It is also an appropriate setting for if you have a refillable coffee capsule for use in Keurig® machines. Medium coffee grinds will be around the same size as sea salt.

PERCOLATOR

If you are brewing with a percolator, the grind setting is a bit coarser than your standard medium grind, to minimize grinds making it through the filter. We use a percolator-specific setting on our grinder.

MEDIUM COARSE

 Vaccuum brewers, Chemex. 

COARSE

For french press, cold brew coffee. A coarse grind is very chunky in look, like crushed peppercorns.
